My Jewish friends are exceptional at this. In turn, I try to recognize their beliefs and wish them "Happy Hannukah" (and tend to pay attention to their much larger holidays). Happy Holidays is more of a generic phrase that I appreciate from strangers (or those who are unsure of which holiday I celebrate). It is not as personal as someone wishing me a Merry Christmas, but it is certainly a polite and courteous thing to say. A couple of years ago, there was a major push to replace "Happy Holidays" with "Season's Best". This was done out of concern of offending those who do not celebrate any holidays at this time of year. I find this rather amusing because my agnostic and atheist friends seem to care the LEAST about what greeting they are offered at this time of year. I would love it if we can all stop tap dancing around this thing. Saying Merry Christmas to a colleague doesn't make anyone less of a Jew, Muslim, Hindu, etc. Likewise, my wishing my Jewish friends a Happy Hannukah, joyous Kwanzaa or taking them out to lunch after Eid doesn't diminish my beliefs in the least. Maybe if we could all stop worrying about how NOT to offend people, and start worrying about getting close enough to know and understand others' beliefs, and wish them happiness in celebrating those beliefs, maybe we'd all be much better off. I do mind it when it's done the way some people are now doing it here, as an attempt to force it on others. I also mind it when it's done assuming that everyone should share the religious beliefs of the person saying it. Speedy set exactly the right tone, but some people couldn't have it and so they had to disrupt it to promote their personal views. It's sad that religion divides people this way. I wish people Happy Holidays unless I know what religion they are. I think anyone who gets upset because someone wishes them a Merry Christmas is an idiot. However, anyone who gets angry because someone says Happy Holidays instead is also an idiot. The problem is that the whole 'War on Christmas' thing isn't about the godly vs. the godless, it is about Christian dominionism.
